The chef makes his own gf pizza crust from scratch and is constantly tweaking and improving the recipe. It's especially comforting knowing in even in a restaurant that has wheat flour flying around they make sure to always go the extra step for me to insure a safe and enjoyable experience. As to the commentator "Artistx" you were suprized that they charged you for a custom order?! Have you never ordered gf at any other restaurant or bought gf groceries?! The price bump is implied. Just the cost of the array of different types of flours and wheat substitutes are more costly for the business. Therefore we pay a measly 2.50 more for a specialty order. &lt;br&gt;I'm never disappointed when dining at credo. Its close to home and has been my go to pizzeria for over a year now. I had the gluten free 4 cheese pizza, no red sauce, just olive oil. My boyfriend had a regular pizza, puttanesca. The gluten free crust was like a large cracker, very crispy, and the edges were so dry, not edible, even with extra olive oil to dip in on the side. It was also smaller than the regular pie. They charge $2.50 extra for gluten free crust, but that fact is not printed on the menu nor did the waitress mention it when I ordered, only found out when we got the bill. Definitely not worth it for the gluten free option. The cheesy bread was excellent and if that was the same dough and crust that they used for the pizzas and calzones it would have been amazing. The calzone crust consisted of what looked similar to, a thick pita cut in half. Toppings were shoved in middle and they tried to press top and bottom edges together to make it seem like a calzone. They have brought out the wrong dish on numerous occasions and when I do receive the correct dish there is always a trace of gluten, either in the garnish or cross contamination in the kitchen. Since each bag makes a quite an amount, I bake it all and freeze what I want to save for later.  The best part is that the texture doesn't change (except for the baguette-just needs to toasted to get that crunch back after being frozen).  I have yet to try using the banana brown mix with pumpkin next for...pumpkin bread!&lt;/p&gt;&lt;p&gt;The easiest place for me to get them is Metropolitan since they are everywhere compared to the other places available.  I've given these mixes as holiday gifts this year-even to the gluten friends ;).
